Today was World Vegetarian Day. There are lots of … lesser-known … holidays out there, so I suppose it ought not to have surprised me that there was a celebration for all things unmeat, but it did.
But since Suzanne pointed it out to me on Friday, I thought I ought to officially celebrate.
- Breakfast: A blueberry scone from the farmers’ market with mascarpone, oj, and tea
- Lunch: A vegetarian wrap (a spinach wrap with hummus, spinach, tomatoes, carrots, mushrooms, and sprouts — Suzanne, I even made it vegan in your honor by leaving off my normal grated cheddar), potato chips, water, and a Honeycrisp apple
- Afternoon Snacks: A miniature Twix bar, Frosted Strawberry PopTarts, and tea (You see where my healthy eating falls apart now, eh?) at work and dark chocolate peanut M&Ms as an appetizer before dinner
- Dinner: Veggie stirfry (featuring tofu, squash, new carrots, spicy and sweet peppers from our garden, and eggplant) with rice, tea, and a yogurt parfait for dessert
Yes, I normally lean veggie anyway, but I figured that it was worth eating consciously today regardless. And it was delicious!

Don’t feel bad – you ate better than this actual vegetarian! Lessee:
Breakfast – pumpkin muffin and medium iced hazelnut (skim and sugar) from Dunkin Donuts
Snack – Cheez-Its, garlic-herb Ritz, giant Golden Supreme Apple
Lunch – Leftover whole wheat penne in a garlic cream sauce w/ garlic and broccoli
Snack – another giant apple, this time either Honeycrisp or Jonagold, I can’t remember which is which!
Dinner – grilled cheese (at least it was on wheat??) and french fries!
Granted, that was a bit unusual, in that DH usually forces a better dinner but we were in a rush!
I am ashamed that I ate so poorly on Vegetarian Day!! Maybe today I can make up for it?
Comment by Jenn 10.02.07 @ 5:26 amHrm. I had no idea it was a vegetarian holiday. My diet tends to lean toward the opposite side of the herbivore-carnivore spectrum.
It’s sad – I’ve been trying to bring my own lunch since going out usually means spending a lot and getting grossly oversized portions of fattening foods. I’m not sure that reverting to peanut butter sandwiches for lunch is eating healthier, but it’s eating LESS. The unfortunate thing was I woke up late yesterday and didn’t have time, so I ended up getting a hot dog. Not so vegetarian of me, at all.
