Today was World Vegetarian Day. There are lots of … lesser-known … holidays out there, so I suppose it ought not to have surprised me that there was a celebration for all things unmeat, but it did.
But since Suzanne pointed it out to me on Friday, I thought I ought to officially celebrate.
- Breakfast: A blueberry scone from the farmers’ market with mascarpone, oj, and tea
- Lunch: A vegetarian wrap (a spinach wrap with hummus, spinach, tomatoes, carrots, mushrooms, and sprouts — Suzanne, I even made it vegan in your honor by leaving off my normal grated cheddar), potato chips, water, and a Honeycrisp apple
- Afternoon Snacks: A miniature Twix bar, Frosted Strawberry PopTarts, and tea (You see where my healthy eating falls apart now, eh?) at work and dark chocolate peanut M&Ms as an appetizer before dinner
- Dinner: Veggie stirfry (featuring tofu, squash, new carrots, spicy and sweet peppers from our garden, and eggplant) with rice, tea, and a yogurt parfait for dessert
Yes, I normally lean veggie anyway, but I figured that it was worth eating consciously today regardless. And it was delicious!
